Okroshka with sausage on a vegetable broth - cold soup made of vegetables and boiled sausage for hot summer days. The name of the soup comes from the word "crumble" - cut finely. Finely chopped meat, boiled potatoes, pickled and fresh cucumbers and spicy greens, and then poured kvass. The traditional okroshka was seasoned with a special white kvass, which was prepared from rye flour and malt, this kvass should be unsweetened. Today, the liquid base for cold soup is made from whey, ayran, mineral water, kefir and even ordinary water with vinegar.

Ingredients for okroshka with sausage on vegetable broth
- 200 g of cooked sausage or 2 large sausages;
- 2 hard boiled eggs;
- 200 g of boiled potatoes;
- 200 g of fresh cucumbers;
- 85 g of green onions;
- 60 g of arugula;
- 30 g of dill;
- 150 g sour cream;
- salt pepper.
- 3 stalks of celery;
- 1 onion;
- 1 carrot;
- a bunch of parsley;
- arrows of garlic and 2-3 cloves of garlic;
- filtered water.
The method of preparation of okroshka with sausage on a vegetable broth
First, prepare the vegetable broth, it is very simple. We put the celery stalks, coarsely chopped, into a saucepan, add a bunch of parsley, arrows or cloves of garlic, carrots, onion, cut into four parts. Pour 1.5 liters of water. Bring to a boil, close the lid tightly and cook over low heat for 45 minutes. Filter the prepared broth and cool to room temperature.
Such a broth can be prepared in large quantities, poured into portioned vessels and frozen. Then use as necessary for the preparation of soups, sauces and, of course, okroshka with sausage on vegetable broth.
When the broth is ready, you can cook okroshka. Ingredients for okroshka need to be crushed and mixed with broth only before serving. This cold soup is prepared immediately before serving.
So, chop a bunch of green onions, grind the onions with salt in a mortar until green juice stands out.
We cook boiled sausage or sausages in small cubes. We cut boiled young potatoes in the same way as sausage. Some of the fresh cucumbers are cut into strips, some are rubbed on a coarse grater.
Hard-boiled chicken, chop finely.
In a bowl or pan, spread sour cream and green onion mashed with salt, pour the cooled vegetable broth, whisk the ingredients until smooth. Onion juice will give the basis of okroshka a light green tint.
In the seasoned broth, we send all the crushed ingredients, add the finely chopped arugula and dill, pepper, freshly ground black pepper.
Let’s brew okroshka with sausage on a vegetable broth in the refrigerator for about half an hour and you can have lunch. Serve cold soup with brown bread on the table. Enjoy your meal!
