Squid stuffed with vegetables and cheese is a simple recipe for a daily menu. Be sure to include seafood in your diet. Squid goes well with vegetables and cheese, it turns out a light dish, which is great for a diet menu. If the portion is small, then at such a dinner you will not get fat. For the recipe you will need small whole carcasses of Pacific squid, usually they are sold in frozen briquettes or individually. If you buy a frozen briquette, then you need to defrost it correctly so as not to damage the carcass. Put the squid in a colander, put the colander in a deep bowl, and this whole structure - in the refrigerator on the lower shelf for about a day. It is advisable to tighten the food film so that the rest of the products in the refrigerator do not smell of the sea spirit. Water that flows into a bowl should be drained periodically.

- 3 carcasses of squid;
- 2 sweet peppers;
- 1 onion;
- 1 tomato;
- 1 carrot;
- a bunch of parsley;
- 40 g parmesan;
- butter and olive oil;
- pepper, sugar and salt.
The method of preparation of squid stuffed with vegetables and cheese
Thawed squid carcasses inside clean - remove the insides and the transparent plate (chord). The peel for stuffed squids can be left, it easily peels off during the cooking process, but if you remove it yourself without any problems with raw carcasses, you can also clean the skin at this stage of cooking.
Squid cleaned from the insides, in turn, lower in boiling water for 2-3 minutes, immediately transfer to cold water, rinse to rinse all unnecessary. Put the prepared carcasses on paper towels, dry.
We make the filling for squid stuffed with vegetables and cheese. We peel onions. We cut the pods of fleshy sweet peppers in half, remove the seeds with the stalk. Cut the onion finely, sweet pepper into cubes. Pour a tablespoon of olive oil into the pan, add the same amount of butter, put onion and pepper, fry for 7 minutes.
Rub carrots on a coarse grater. Cut the tomato into small cubes. Finely chop a bunch of parsley with sprigs. Add the carrots and tomato to the pan, after 10 minutes we put the greens. All together, salt to taste, pepper, add a pinch of granulated sugar, warm for a few more minutes.
Put slightly cooled vegetables in a bowl, add grated parmesan, mix.
We fill the carcasses with minced meat not very densely, squids will shrink under the influence of heat, if there are a lot of fillings, then it can get out and burn on the grill.
We heat the grill. Grease stuffed carcasses with olive oil, put on a hot grill. Cook for 3 minutes on each side, this time is enough, squids will remain juicy and tender.
Serve squids stuffed with vegetables and cheese, warm or cold on the table, delicious in any case. Squids do not need anything other than a dried slice of ciabatta, grated with a clove of garlic and sprinkled with olive oil.
