Oven Cauliflower Fritters
Cauliflower pancakes in the oven are tender, golden, and very tasty. Cauliflower, casseroles, cream soups are prepared from cauliflower, but pancakes, in my opinion, turn out to be the most delicious!

Cooking pancakes, cheesecakes or small pancakes in the oven is much simpler and easier than frying in a skillet. Firstly, you spend significantly less vegetable oil, this reduces fat content and reduces the number of calories per serving. Secondly, the stove remains clean, because everything is cooked in a closed oven, and not in a pan, when splashes of oil fly around the burner. Thirdly, the kitchen will never smell like burnt oil, which is typical for frying on the stove, only the delicious smell of vegetable pancakes!

Ingredients for Cauliflower Fritters
- 450 g of cauliflower;
- 120 g carrots;
- 50 g of sour cream;
- 1 chicken egg;
- 55 g whole wheat flour;
- 20 ml of olive oil;
- sea salt, baking powder, vegetable oil.
The method of preparation of cauliflower fritters
We rinse the cabbage of cauliflower with cold water, cut off the inflorescences from the stump. Inflorescences are placed in a blender bowl, and the stalk can be left for cooking cabbage soup or chicken broth.

We clean the carrots, rub on a coarse grater, add to the blender. If a powerful processor is installed in your blender, simply cut the carrots into small slices.

Next, add a little sour cream to the vegetables. For the diet version of the dish, replace sour cream with low-fat kefir.
With a few impulse inclusions, grind the vegetables into a smoothie.

Then we add an egg to the blender bowl, which will serve as a kind of glue that holds vegetables together.

Pour dry ingredients - whole wheat flour, sea salt to taste, baking powder on the tip of a knife. Mix the ingredients until smooth. By the way, for a diet menu, replace wheat flour with bran from oats or wheat.

Transfer the dough into a deep bowl, add extra virgin extra virgin olive oil, knead the dough with a spoon, and by consistency it will look like very thick sour cream.

Grease a baking sheet or non-stick baking dish with refined cooking oil for frying. Then we spread the pancakes with a tablespoon, leaving a small distance between them, since when baking, the pancakes will increase slightly.

We heat the oven to a temperature of 190 degrees Celsius. Place the pan with the pancakes in the middle of the oven. Bake for 4-5 minutes on each side - when one side is fried, take out a baking sheet, carefully turn the pancakes, and put the baking sheet in the oven again. Do not forget to close the oven door so as not to release heat!

To the table, serve the cauliflower pancakes hot, in the heat of the heat. Season to taste with sour cream or Greek yogurt.
