Olivier with chicken
How, is it really Olivier again on New Year's Eve? How much can you, you say, because you want something new, unusual. And our olivier is a new, original one - instead of a traditional salad with sausage, not much similar to the original recipe, we will prepare an olivier with chicken. It will turn out much tastier and healthier!

Of course, this dish is also far from the classic recipe of the late 19th century, which included grouse, olives, pickles, capers and truffles. Now not everyone knows what the ingenious names of the ingredients mean.
Gradually pickles (pickled vegetables) transformed into pickles, green peas appeared instead of olives, and hazel grouses turned into chicken. But the recipe in a simplified form can be reproduced by every culinary specialist, and certainly, olivier with chicken is a much more elegant option with boiled sausage.
Instead of chicken, you can take boiled beef, while the taste of olivier will only win. But, if you want to serve a light salad to the New Year's table - take chicken, and instead of pickles - fresh. Olivier in this configuration gets a fresh, almost summer taste.
Ingredients for Chicken Olivier
- 5 potatoes;
- 3-4 carrots;
- 2-3 eggs;
- a can of canned green peas;
- 1-2 salted or fresh cucumbers;
- 1 chicken fillet or 2 thighs;
- 3-4 tbsp. l mayonnaise;
- salt to taste.

Some olivier recipes have apple and onion, but this is a variation on the theme.
Method for cooking olivier with chicken
Rinse the chicken fillet or thighs, put it in cold water, boil until it boils, boil for 2-3 minutes, then add the first water and fill in a new one. Salt and boil until tender - 25-30 minutes.
Boil potatoes and carrots in their skins. Hard boiled eggs. Fill with cold water to make peel and shell easier to peel off. Peel the vegetables and eggs.

We catch the chicken from the broth and divide it into pieces with our hands.
Cut potatoes, carrots, eggs and pickles into cubes. Pour water with peas.

Combine all the ingredients in a bowl, season with mayonnaise, slightly salt and mix.

Olivier salad with chicken is ready. It can be served in a festive salad bowl, garnished with sprigs of parsley, but it will be even more beautiful if the salad is laid out in portioned transparent bowls. Enjoy your meal!
