Who said potato pancakes are cooked only? Apple pancakes are even tastier, and that's another story!
From personal experience - you do not need a lot of flour, apples feel great without it. If for some reason the flour cannot be added, replace it with instant oat flakes, rice flour or chickpea flour.

- 1 egg

The method of preparation of tender apple pancakes with cottage cheese
We peel a large, sweet apple, cut out the core. If the apples are small, then take two, or even three. Rub apples on a large vegetable grater. On such a grater I make potato pancakes, they turn out to be slightly disheveled, but tasty.
In a bowl with grated apples, break a fresh chicken egg, add a pinch of fine salt, mix the ingredients to destroy the structure of the egg.
Next, add cottage cheese, preferably fatty - it will be tastier. In this recipe, I used the rest of the curd paste with fruit, it is a bit sweet. To ordinary cottage cheese, you can add a teaspoon of powdered sugar. It is better not to put a lot of sugar in the dough, so that the dough does not burn during frying, it is better to sprinkle ready-made pancakes with powdered sugar.
Now pour two tablespoons of premium wheat flour into a bowl.
Add baking powder, it loosens the dough so that our pancakes do not turn out tough, similar to soles.
Knead the dough well with a spoon, add a little olive oil. Always add a little butter to the dough, so the pancakes or pancakes will turn out tender and do not burn.
We put the pan on the stove, heat it, pour refined vegetable oil for frying. We spread the dough with a tablespoon, leave a small distance between the potato pancakes, fry them over moderate heat on one side for 2-3 minutes until golden brown.
Turn over, fry about the same time on the other hand until they are browned.
We put ready-made pancakes on a paper towel so that the paper absorbs excess vegetable oil, then we transfer it to a plate.
First, sprinkle abundantly with powdered sugar through a fine strainer.
After powdered sugar, sprinkle with ground cinnamon, it perfectly complements apples and sets off their taste.
We serve apple pancakes with cottage cheese on the table hot, with sour cream or whipped cream, pour over jam. Bon appetit, cook simple food with pleasure!
