Braised Beef with Prunes

If you have a piece of beef, but it seems to you that it is too long to twist it in a meat grinder and make cutlets, but just stew the meat in onion gravy is too simple, let's master a new dish. Try beef stew with prunes - this simple but refined recipe will be one of your favorites!

Ingredients for Braised Beef with Prunes
- 500-600 g of pitted beef and fat;
- 1 large carrot or 2 medium;
- 2-3 medium-sized onions;
- 50-100 g pitted prunes;
- 2 tablespoons of tomato paste (or half a glass of tomato juice);
- 2-3 glasses of water;
- 1 tablespoon of salt without top;
- 10-15 pieces of black pepper peas;
- 1-2 bay leaves;
- refined sunflower oil for frying.

The method of cooking beef stew with prunes
Cut the beef into cubes approximately 2x2 cm, it is more convenient to do this while the meat has not yet completely thawed.
Peel the vegetables, wash. Chop the onion finely or in quarter rings, grate the carrots on a coarse grater.
Heat up the sunflower oil in a pan with high sides, pour the onion there and sauté it, stirring it over medium heat until soft.
Then add the grated carrot to the onion and continue, stirring occasionally, sauté together.
After 3-4 minutes, add the meat to the carrot-onion company. Fry a little, stirring, until the color changes.
Pour in a pan 2–2.5 glasses of water - so that the meat is covered - cover with a lid and leave to simmer over medium heat for about 30-35 minutes. Gravy should boil slowly.
When the meat is soft, it's time to add prunes! Both dried and smoked ones are suitable, but the first option is more to my taste: it is softer and the aroma is more pleasant. After rinsing dried fruits under the tap, pour a dozen prunes into the pan and mix.
Stir in a half glass of water tomato paste and pour into the pan. Instead of pasta, you can use tomato juice or mashed fresh tomatoes - then there is no need to dilute with water.
Salt the gravy and add spices: peppercorns and bay leaf. Stir and simmer for a few more minutes, then turn off the heat. Fragrant, appetizing meat sauce with prunes is ready!
